Bourbon St. restaurant opens

Chef Kevin Corbett was fine-tuning his crawfish etouffee recipe with the kitchen crew last Thursday as the opening hour approached for the highly anticipated Bourbon St. restaurant. Kicking off with a soft launch over the weekend, Corbett, a co-owner in the operation, was eager to introduce his spin on Creole classics to the area’s dining public. “I think once people try the char-broiled oysters, they’ll never turn back,” he said.
The transformation of the space at 35 N. Front St., formerly the bright and airy home of Caffé Phoenix, is impressive. Carnival masks, beads and plenty of other Crescent City trappings are unapologetically scattered throughout, creating an undeniably festive vibe.
General Manager Chap Wallace says longtime Wilmingtonians will feel at home with the live entertainment on a freshly installed stage that mirrors the footprint of Paleo Sun, a popular club that occupied the space a decade ago.
The eatery is open seven days a week, from 11:00 a.m. Mon-Sat. and noon-2:00 a.m. Sundays. They have created a Facebook page which currently hosts a boatload of photos from the kitchen, swing by to whet the appetite.
